I decided to construct my rudder from Douglas Fir. It seemed to be a good choice based on based on the stability and strength of the species. As you can see from the photos I laminated it in multiple pieces together with the grains opposing to limit distortion. The profile was all done by hand using planes and belt sander. It turned out pretty good, It is not a factory finish on the profile but it is good for me. You can see the fiberglass reinforcing strip being applied as well as the fiberglass cloth wrap.
Here is the finished rudder and daggerboard installed.
